Our Matcha comes from Nishio city in Aichi prefecture, Japan, generally considered the top Matcha producing area in the world. Nishio has ideal terrain for Matcha production: it’s remote, elevated lands, mild climate and fertile soils produce maximum nutrients and wildly bright color.

Matcha is 100% green tea made from nutrient-rich tea leaves handpicked from the tips of shade-grown Camellia Sinensis plants. Unlike traditional green tea, Matcha production involves covering the tea plants with shade cloths before they’re harvested. This stimulates an increase in chlorophyll levels, turns the leaves a darker shade of green, and causes the production of amino acids, in particular L-Theanine. After the shading process is complete, the leaves are hand-picked, steamed briefly to stop fermentation, dried and aged in cold storage to deepen the flavor. The dried leaves are then stone-ground into the fine powder that is Matcha. It is from this grinding process that Matcha – literally, “ground tea” – derives its name.
